Tonight’s dinner was such a hit with my family that I just had to share the recipes. The best part? All of the recipes can be made ahead of time and frozen. All the recipes are from the once a month cookbook series “30 Meals in One Day”. These 3 cookbooks are quickly becoming my favorites for once a month cooking. Today’s menu was Hawaiian Meatballs, Fried rice and Crispy wontons.
Hawaiian Meatballs
Meatballs
1/2 pound ground pork
1/2 pound ground beef
1 egg, slightly beaten
1/2 tsp garlic salt
1 tsp salt
1/8 tsp pepper
1/2 cup dry bread crumbs
2 Tbsp minced onion
2Tbsp Worcestershire sauce
Combine all ingredients and shape into 1-inch meatballs. Arrange close together in a single layer on a baking sheet. Bake @ 350 for 7 minutes. Cool and transfer to 1 gallon freezer bag.
Sauce
1 cup brown sugar
1/4 cup cornstarch
2 cups pineapple juice
1 tsp salt
1/2 cup apple cider vinegar
2 Tbsp soy sauce
1 (20 oz) can pineapple chunks
Combine all ingredients except pineapple chunks in saucepan. Cook and stir until thick and clear. Remove from heat, add pineapple. When cool, pour over meatballs in freezer bag and freeze.
To serve: Thaw and heat until sauce is hot and bubbly and meatballs are hot.
Fried Rice
2 cups uncooked rice
4 slices bacon
1 bunch green onions, sliced
1 egg, beaten
2 Tbsp soy sauce
1 tsp sugar
Cook rice according to package directions. Meanwhile, cut bacon into 1/4 inch pieces. Cook in skillet until almost crisp. Add onions and cook for 2 minutes but do not brown. Pour in beaten egg and scramble. Stir in rice, soy sauce and sugar. Cool and place in freezer bag.
To serve: Heat rice in microwave or briefly stir-fry thawed rice in skillet.
Crispy Wontons
3 Tbsp soy sauce
1 lb ground pork
1 tsp brown sugar
1 tsp minced garlic
1/2 (16 oz) pkg square wonton wraps
oil for deep frying
Combine soy sauce, pork, sugar and garlic. Spoon 1 Tbsp of filling onto center of each wonton square. Dampen edges with water. Fold each wonton in half to form triangles and press edges together. Arrange in a single layer on a baking sheet. Cover and freeze. When they are frozen, transfer to a freezer bag.
To serve: Thaw. Deep-fry in oil heated to 350 for about 5 minutes, until golden brown.
