Recipes by request

I had a request for 2 of the recipes on my menu plan for this week. They are both freezer recipes from the books “Dinner is Ready” and “Lunch is Ready” by 30 Meals in One Day

Apple Roast Pork

1 (4-pound) pork roast
1/3 cup Worcestershire sauce
3/4 cup packed brown sugar
1 cup apple juice
1/2 tsp salt

Place roast in dish or pan barely larger than the roast. Douse roast on all sides with Worcestershire sauce. Press brown sugar on sides and top of roast. Pour apple juice into the pan but not over roast. Cover tightly with foil and lid. Place roast in pre-heated 400 degree oven. Immediately turn heat down to 275. Bake for 5 hours. Remove from oven, cool and freeze.

To serve: Thaw and heat. I reheated ours in the microwave, or it can be done in the oven.

Teriyaki Chicken

2 pounds bonelss skinless chicken breasts
3/4 cups soy sauce
1 cup sugar
3 Tbsp red wine vinegar
2 tsp sesame oil
2 tsp minced garlic
1 1/2 tsp minced ginger
1/4 cup cornstarch

Cut chicken into bite-sized pieces. Arrange ina  greased baking dish. Bake for 15 minutes. Pour off liquid, cool and place in freezer bag.  In a saucepan, combine all other ingredients. Cook and stir until thick and glossy. Cool and pour over chicken in freezer bag. Freeze,

To serve: Thaw. Heat until hot and bubbly. Serve with rice.
